Summer Vegetable Tian: Zucchini, Potatoes, Tomatoes, and Cheese

Ingredients for 4 Servings:

  • 1 large onion
  • 1 tsp dried Italian herbs
  • 1 zucchini
  • 1.4 oz (40 g) shredded cheese
  • 3 tbsp vegetable oil
  • Salt
  • 3 large potatoes
  • 3 tomatoes
  • 2 sprigs thyme
  • 1 large garlic clove

Instructions:

Prepare the Vegetables:

  1. Peel and finely chop the onion and garlic.
  2. Slice the potatoes, zucchini, and tomatoes into 0.2-inch (5 mm) thick rounds.

Sauté the Onion and Garlic:

  1. In a pan, heat 2 tbsp of vegetable oil over medium heat.
  2. Sauté the onion and garlic until translucent, about 6 minutes.

Assemble the Tian:

  1. Spread the sautéed onion and garlic mixture at the bottom of a baking dish.
  2. Arrange the vegetable slices in a vertical, alternating pattern (potato, tomato, zucchini) over the onion and garlic layer.

Season and Bake:

  1. Sprinkle the vegetables with dried Italian herbs and salt.
  2. Drizzle the remaining 1 tbsp of vegetable oil over the top.
