INSTRUCTIONS

First, pour the milk into a pot with a thick bottom, place it on the stove and bring it to a boil. Add the cottage cheese and bring it to a boil again, stirring constantly. Once it starts boiling, let it simmer for exactly 3 minutes.

Then, line a colander with cheesecloth and strain the cheese from the whey. Don’t discard the whey, you can use it in baking.

Return the cheese to the pot, place it on medium heat, add salt, baking soda, and the egg, and vigorously stir and melt everything together until it reaches a stretchy consistency, for about 5-6 minutes.

Transfer the cheese to a container, cover it with plastic wrap, and let it cool completely at room temperature.
