Ingredients for Royal Cottage Cheese Pie:

For the Dough:

  • 250 grams (about 2 cups) flour
  • 120 grams (about 1/2 cup) butter
  • 100 grams (about 1 cup) powdered sugar
  • 1 egg yolk
  • 2 tablespoons sour cream
  • 2 tablespoons cocoa
  • 1/2 teaspoon baking powder

For the Filling:

  • 1 kilogram (about 2.2 pounds) cottage cheese
  • 400 grams (about 1.7 cups) heavy cream
  • 200 grams (about 1 cup) sugar
  • 5 eggs
  • 60 grams (about 1/2 cup) coconut flakes
  • 30 grams (about 1/4 cup) starch

Royal Cottage Cheese Pie Preparation:

Prepare the Dough:

  1. Mix dry ingredients: flour, powdered sugar, cocoa, and baking powder. Transfer to a food processor and add slightly softened, cubed butter.
  2. Process into crumbs. If you don’t have a food processor, you can prepare it by hand, though it might be a bit more challenging.
  3. Add egg yolk, sour cream, and process again. Form the dough into a ball. Do not knead excessively.
  4. Divide it into 2 equal parts and refrigerate for an hour.

Prepare the Filling:

  1. In a bowl, combine cottage cheese, heavy cream, and sugar. Blend until smooth.
  2. Add eggs and starch. Blend with a blender until no lumps remain. Add coconut flakes and mix with a spoon.

Assemble the Pie:

  1. Grate one part of the dough using a coarse grater and spread it at the bottom of the baking dish, pressing it down slightly.
  2. Pour the filling over the dough. Grate the second part of the dough over the filling and level it.
  3. Bake the dessert for about an hour at 160 degrees Celsius (320 degrees Fahrenheit). The filling should have a slight jiggle, similar to baking a cheesecake.
