Potato and Beet Casserole

Ingredients (Serves 6):

  • Beets: 200g (7 oz)
  • Grated cheddar cheese: 250g (8.8 oz)
  • Eggs: 4
  • Prepared horseradish: 1 tbsp (15g)
  • Potatoes: 750g (1.65 lbs)
  • Salt: to taste
  • Sour cream: 200ml (3/4 cup)

Instructions:

Prepare the Vegetables: Peel the potatoes and beets, then slice them thinly. Place the potato slices in a bowl of cold water for 15 minutes to remove excess starch.

Make the Egg Mixture: In a small bowl, whisk together the sour cream, eggs, horseradish, salt, and pepper.

Assemble the Casserole: Preheat the oven to 180°C (350°F). Grease a baking dish and line it with parchment paper. Layer half of the potatoes in the dish and sprinkle with 1/3 of the cheddar cheese. Add a layer of beet slices and sprinkle with another 1/3 of the cheese. Top with the remaining potatoes.

Add the Egg Mixture: Pour the egg mixture over the top layer of potatoes and sprinkle with the remaining cheddar cheese. Cover the dish with foil.
