Quick Bacon and Green Onion Muffins

Ingredients (Serves 10):

  • Butter: 85g (6 tbsp)
  • Bacon: 5 slices
  • Vinegar: 1 tbsp (15ml)
  • Eggs: 2
  • Sugar: 1 tbsp (12g)
  • Pancake flour: 250g (2 cups)
  • Baking powder: 1 tsp (5g)
  • Green onions: 1/2 bunch
  • Milk: 280ml (1.2 cups)

Instructions:

Prepare the Wet Ingredients: Add the vinegar to the milk and let it sit for 20 minutes. Then, add the melted butter and eggs, and mix well.

 

Prepare the Dry Ingredients: In a large bowl, combine the pancake flour, sugar, and baking powder.

Combine Wet and Dry Ingredients: Pour the milk mixture into the flour mixture and stir until smooth.

Quick Bacon and Green Onion Muffins

Cook the Bacon: Fry the bacon in a dry skillet until golden and crispy. Let it cool and then chop into small pieces. Chop the green onions.

Mix in Bacon and Onions: Add the chopped bacon and green onions to the batter and mix until evenly distributed.

Bake the Muffins: Place paper liners in a muffin tin and fill each liner with batter. Bake in a preheated oven at 200°C (390°F) for 15 minutes. Let the muffins cool slightly on a wire rack before serving warm.
