Panna Cotta with Cherry Sauce

Ingredients (Serves 2):

  • Strip of lemon zest: 8×1 cm (3×0.4 inches)
  • Heavy cream (35% fat): 200 ml (3/4 cup)
  • Vanilla sugar: 1 tsp (5g)
  • Cinnamon: a pinch
  • Granulated gelatin: 10g (2 tsp)
  • Sugar: 3 tsp (12g)
  • Blackcurrant jam: 1 tbsp (15g)
  • Frozen cherries: 100g (3.5 oz)
  • Fine cornmeal: a pinch
  • Milk: 120 ml (1/2 cup)

Instructions:

Prepare the Gelatin: Sprinkle the gelatin over the milk and let it sit for 5 minutes. Thaw the cherries at room temperature if they are frozen. Partially thawed berries are easier to work with if they are not intended for garnish.

Make the Cream Mixture:

In a saucepan, combine the heavy cream, regular sugar, vanilla sugar, lemon zest strip, and cinnamon. Bring to a boil over high heat.

Reduce the heat and simmer, stirring, for 5 minutes. Add the milk with the gelatin and heat for 2-3 minutes, stirring constantly until the gelatin is completely dissolved (do not boil). Remove the lemon zest.

Cool the Mixture:

Place the saucepan in a larger bowl filled with ice water. Whisk the mixture for 10-12 minutes until it thickens.

Chill the Panna Cotta:

Pour the mixture into heart-shaped molds and refrigerate for 4 hours.

Prepare the Cherry Sauce:

Remove the pits from the cherries and press the berries through a sieve into a saucepan.

Add the blackcurrant jam and fine cornmeal, stirring well. Bring to a boil over medium heat and cook for 1 minute. Cool and refrigerate.

Serve:

To unmold the panna cotta, run a knife blade between the panna cotta and the edges of the mold, then quickly invert onto a dessert plate.
