Ingredients for 12 servings of “Semolina” Cake:

  • Butter – 250 g (0.55 pounds)
  • Milk – 1 liter (2.20 pounds)
  • Sugar – 1 cup (200 g) (0.44 pounds)
  • Egg yolks – 3 (or 9-10 quail egg yolks)
  • Semolina – 1 cup (200 g) (0.44 pounds)
  • Canned peaches – 1 can (900 g) (1.98 pounds)
  • Gelatin – 2 tablespoons (20 g) (0.04 pounds)
  • Round shortbread cookies – 100-150 g (0.22-0.33 pounds)
  • Cocoa powder – 1 tablespoon
  • Kiwi or jam for decoration

No-Bake “Semolina” Cake: Step-by-Step Recipe

  1. Cook milk semolina porridge, stirring constantly. Set aside to cool.
  2. Softened margarine or butter, beat with a hand mixer. Add sugar and continue beating. Add egg yolks one at a time and continue beating.
  3. To the egg yolk mixture, add cooled semolina porridge one tablespoon at a time, stirring continuously, until the entire porridge is combined with the butter mixture.
  4. Divide the mixture into two parts, adding 1 tablespoon of cocoa to one part.
  5. Take a detachable baking pan Ø 23 cm (9 inches), place round cookies on the bottom. Layer the first layer of coffee-flavored semolina pudding on the cookies, followed by the second layer of white semolina pudding. Smooth everything out and refrigerate the mold.
  6. Drain the peaches through a sieve. Pour the syrup into a small saucepan, add gelatin, and set aside for 5 minutes to allow the gelatin to dissolve and swell.
  7. Use a hand blender to puree the peaches. Heat the prepared gelatin until completely dissolved. Add two tablespoons of fruit puree to the gelatin to equalize the temperature, then pour the gelatin mixture into the remaining puree.
  8. Remove the prepared cake form from the refrigerator and pour the top with the fruit-jelly mixture.
  9. Place the cake in the refrigerator until the jelly sets completely.
  10. Remove the set cake from the refrigerator and release it from the mold.
  11. Peel and slice kiwi into rounds and decorate the top of the cake. You can also decorate the “Semolina” cake with other fruits and/or jam.
