- 1 salmon weighing 2 kg (4.4 lbs)
- 5 cm (2 inches) ginger root
- 1 tbsp olive oil
For the filling:
- 400 g (14 oz) large cooked shrimp
- 50 ml (1.7 fl oz) cream
- 1 small bell pepper
- 1 bunch green onions
- 2 cloves garlic
- 4 tbsp soy sauce
- 2 tbsp honey
- 3 tbsp lemon juice
- 2 tbsp lemon seasoning for fish

Directions
Prepare the Salmon:
- Clean, gut, and thoroughly rinse the salmon.
- Make a deep cut along the backbone, slightly spread the flesh, and carefully cut along the ribs to divide the fish into two halves.
- Remove the backbone, tail, fins, rib bones, and any small bones.
- With a very sharp knife, make deep crosswise cuts on the skin of one fillet.
Make the Filling:
- Chop the green onions diagonally into small pieces.
- Remove seeds from the bell pepper and slice it into thin half-rings.
- Peel and mince the garlic and ginger.
- Peel and halve the shrimp lengthwise.
- Heat the olive oil in a skillet and sauté the onions, bell pepper, ginger, and garlic until soft, about 3-4 minutes.
- Pour in the cream, stir, and cook until the mixture thickens.
- Add the shrimp and cook for 1 minute. Remove from heat and season with salt.
Assemble the Dish:
- Place a piece of parchment paper on your workspace, the size of your baking sheet.
- Lay out 4 pieces of string, each 30 cm (12 inches) long, at equal intervals on the parchment.
- Place the fillet without cuts, skin side down, on top of the string.
- Evenly spread the prepared filling over the fish. Sprinkle with lemon seasoning.
- Cover with the second fillet, pressing down lightly.
- Tie the strings to secure the fish.
Bake the Salmon:
- Preheat your oven to 220°C (425°F).
- Carefully transfer the parchment with the fish onto a preheated baking sheet.
- Bake for 30 minutes.
Prepare the Sauce and Serve:
- In a small saucepan, heat the lemon juice, honey, and soy sauce.
- Transfer the cooked fish to a serving dish, drizzle with the sauce, cover with foil, and let rest for 5 minutes before serving.
