Ingredients for 6 servings:

  • Squid – 1.75 lbs (800 g)
  • Carrots – 4
  • Onion – 1

For the marinade:

  • Sugar – 4 tablespoons (50 g)
  • Paprika – 1 teaspoon (5 g)
  • Cloves – 2 buds
  • White wine vinegar – 1/4 cup (60 ml)
  • Black peppercorns to taste
  • Allspice to taste
  • Vegetable oil – 2 tablespoons (30 ml)
  • Salt – 2 teaspoons (10 g)


Prepare the Squid:

Clean and wash the squid. Heat 1 tablespoon (15 ml) of oil in a skillet and sauté the squid for 3 minutes. Transfer to a plate.

Prepare the Vegetables:

Peel the onion and carrots. Cut the onion into rings and the squid and carrots into thin strips. Sauté the onion in the same skillet used for the squid for 5 minutes.

Make the Marinade:

In a saucepan, combine 2 cups (500 ml) of hot water with the spices, sugar, and salt. Simmer on low heat with the lid on for 15 minutes. Allow the mixture to cool to room temperature, then strain and add the vinegar and remaining oil.

In a bowl, combine the onion, carrots, and squid. Pour the marinade over the mixture and refrigerate for 10-12 hours.
