Quick Apple Charlotte with Berries

Ingredients:

  • 3 chicken eggs (3 eggs)
  • 1 cup sugar (1 cup)
  • 1 cup sour cream (1 cup)
  • 1 cup all-purpose flour (1 cup)
  • 1 teaspoon baking soda
  • 3 medium-sized apples
  • 100g frozen red and black currants (about 1/2 cup, not thawed)
  • Zest of half a lemon

Quick Apple Charlotte with Berries

Instructions:

  1. Beat eggs with sugar. Add sour cream and beat again.
  2. Dissolve baking soda in vinegar, add to the egg-sour cream mixture, and beat once more.
  3. Introduce flour, beating the batter until smooth.
  4. Remove cores and stems from apples, and slice them into thin wedges.
  5. Pour half of the batter into a buttered baking dish and arrange the apple slices on top.
  6. If the apples are sweet, grate lemon zest over them.
  7. Sprinkle red and black currants randomly over the apples.
  8. Pour the remaining batter over the fruits and bake in the oven at 180 degrees Celsius (about 350 degrees Fahrenheit) for 30-40 minutes.
  9. Check for doneness with a wooden stick; if it comes out dry, the charlotte is ready.
  10. Transfer the charlotte to a flat dish and serve. Enjoy it both hot and cold.
