I don’t know if this recipe for Milanese salad really has anything to do with the famous Italian city, but the dish turns out delicious.
INGREDIENTS
- 200 gr. cod fillet (or any other white fish)
- 1 sweet pepper
- 150g of boiled potatoes
- 50 g pinenuts
- 70-80 g. arugula
- 50 g. olives
dressing:
- 1 tbsp. balsamic vinegar
- 20 ml. olive oil
- 0.5 lemon juice
- salt and pepper
Instructions
Wash peppers, remove the stalks, put them on a baking tray, drizzle with oil and bake at 180°C for 20 minutes.
Put the fish into the form. Also spray with oil and bake also for 20 minutes.
I did it all at the same time in the same mold.
Put the peppers in a plastic bag, cool and easily remove the skin, cut the pulp as you like.
Cut the olives into rings.
Roast the nuts in a dry pan (I did not do this)
Slice the potatoes.
Wash and dry the ruccola.
Mix all the ingredients.
Make the dressing:
Combine all the ingredients and lightly whip with a whisk.
Pour over the salad and serve!
