Ingredients for 20 Servings:

  • 1 egg
  • 3 tablespoons vegetable oil (45 ml)
  • 3 onions
  • 1 cup milk (240 ml)
  • 8 grams dry yeast
  • 2 tablespoons sour cream (30 ml)
  • 60 ml unrefined sunflower oil (¼ cup)
  • 1 teaspoon salt (5 grams)
  • 3 cups flour (360 grams)
  • 1 tablespoon sugar (15 grams)


Prepare the Sponge:

Mix the yeast with 1 tablespoon of flour. Pour warm milk into a large bowl, add salt and sugar, and stir until dissolved. Add the flour-yeast mixture and stir well. Cover the bowl and let it sit in a warm place for 20 minutes.

Prepare the Onions:

Peel and dice the onions. Sauté them in heated vegetable oil until golden brown, about 7 minutes. Add a pinch of salt and sugar, mix well, and let cool.

Add the slightly warm sautéed onions, egg, sour cream, and half of the sunflower oil to the sponge. Mix thoroughly with a spatula or a large whisk.

Gradually add the sifted flour to the mixture, kneading until a soft dough forms. Add 1 tablespoon of the remaining oil at the end. Cover the dough and let it rise for 30 minutes. Punch it down and let it rise for another 15 minutes.

Punch down the dough again. Shape it into a ball and place it on a parchment-lined baking sheet. Cover with a towel and let it rest for 15 minutes. Shape the dough into a loaf.
