  • Onion: 1 medium
  • Garlic: 2 cloves
  • Fresh parsley, chopped: 1 bunch
  • Fresh basil, chopped: 2 sprigs
  • Stale breadcrumbs: 1/2 cup (120 ml)
  • Milk: 3.4 fl oz (100 ml)
  • Hard-boiled quail or small chicken eggs: 6
  • Pork tenderloin: 2.2 lbs (1 kg)
  • Ground beef: 1.1 lbs (500 g)
  • Grated Parmesan: 1/2 cup (120 ml)
  • Egg: 1 large
  • Vegetable oil: 2 tbsp
  • Meat broth: 4.2 cups (1 liter)

Instructions

Step 1

Prepare the ingredients for the festive meatloaf. Peel and finely chop the onion and garlic. Wash, dry, and chop the parsley and basil. Soak the breadcrumbs in milk. Peel the hard-boiled eggs. Cover the pork tenderloin with plastic wrap and pound it into a thin sheet.

In a bowl, mix the ground beef with soaked breadcrumbs, Parmesan, onion, garlic, herbs, and raw egg. Mix thoroughly. Spread the prepared mixture in the center of the pounded pork tenderloin.

Press the hard-boiled quail eggs into the beef mixture along the center line, parallel to the long side, spacing them evenly or placing them close together.

Carefully but tightly roll the meatloaf. Tie it with kitchen string. In a large skillet that fits the entire roll, heat the vegetable oil.

Brown the meatloaf on all sides until golden. Transfer to a baking dish. Pour in the broth, cover, and place in a preheated oven at 392°F (200°C) for 1.5 hours. If the top starts to burn, cover with aluminum foil.

You can line the pork tenderloin sheet with lightly blanched spinach or Savoy cabbage for a more colorful presentation.

Additional Information
