Ingredients for Quick Apple Sand Cake:

For the Dough:

  • 3 cups (360g) Flour
  • 1 cup (200g) Sugar (adjust to taste)
  • 150-180g (5.3-6.3 oz) Butter (unsalted or vegetable)
  • 170-200g (6.0-7.1 oz) Light Mayonnaise (or substitute with kefir, sour cream, buttermilk)
  • 1 Egg
  • 3 Apples (Feel free to use other fruits like plums, peaches, bananas, berries – the choice is yours)
  • 1 teaspoon Baking Soda
  • A pinch of Salt
  • 1-2 tablespoons Vinegar or Hot Water (to neutralize the soda)

  1. In a separate bowl, mix sugar, butter, egg, mayonnaise, and salt until homogeneous. Add soda neutralized with hot water (or vinegar) at the end. Mix everything once more and pour into a bowl with flour. Stir the dough thoroughly with a spoon. It should be quite dense, not too liquid but not overly thick.
  2. Immediately spread the dough on a baking sheet or any form (no need to grease or sprinkle the form). Flatten the dough, and if the baking sheet is large, you can use your hand, previously greased with vegetable oil.
  3. The height of the dough should be about 1 cm. You can make it very thin or slightly thicker, but remember not to spread the sand dough too thick, as it may not bake inside. It’s better to bake several small cakes if the form is small, or make a couple of cakes and then join them into one tall pie.
  4. Cut the apples into slices or as you like (do not remove the peel, only remove the core) and immediately place them on the dough. If you want a sweeter pie, sprinkle a little sugar on the dough first and then on the apples.
  5. Place in a preheated oven. Bake for about 20 minutes at a temperature of 200-220 degrees Celsius (390-430 degrees Fahrenheit). Baking time depends on the characteristics of your oven. So, when making this cake for the first time, carefully monitor its condition.
  6. Take out the pie, cut it into pieces, or place it on a plate whole. Optionally, decorate with powdered sugar or any sweet sprinkle.
