The recipe for these marvelous cottage cheese rolls found its way to me serendipitously and has swiftly become a cherished favorite in my household.
The filling, made from whipped egg whites and cottage cheese, imparts an irresistibly tender and airy texture to these delightful rolls.
Ingredients:
For the Dough:
- 200 grams of margarine (7 ounces)
- 3 cups of flour
- 0.5 teaspoon of baking powder
- 1 cup of kefir
For the Filling:
- 500 grams of cottage cheese (17.6 ounces)
- 0.5-1 cup of sugar
- 1 teaspoon of vanilla extract
- 1 egg white
For Brushing:
- 1 egg yolk
Cooking Instructions:
- Finely chop the margarine. Mix the flour with baking powder and add it to the margarine, then mix well.
- Add kefir to the crumbly mixture. Gently gather the dough, being careful not to over-knead it.
- Divide the ready dough into 3 balls and leave them in the refrigerator for 1 hour.
- Mash the cottage cheese with sugar and vanilla extract. Beat the egg white until stiff peaks form, then gently fold it into the cottage cheese mixture.
- Roll out the dough into rectangles (thickness 3 mm), spread the cottage cheese mixture over the surface, roll it into a log, and cut it into diagonal pieces.
- Place the rolls on a baking sheet lined with parchment paper.
- Brush the rolls with egg yolk and bake for 30-35 minutes at 180°C (356°F).
