Cottage Cheese Wonder Rolls: Soft and Airy!

The filling, made from whipped egg whites and cottage cheese, imparts an irresistibly tender and airy texture to these delightful rolls.

Ingredients:

For the Dough:

  • 200 grams of margarine (7 ounces)
  • 3 cups of flour
  • 0.5 teaspoon of baking powder
  • 1 cup of kefir

For the Filling:

  • 500 grams of cottage cheese (17.6 ounces)
  • 0.5-1 cup of sugar
  • 1 teaspoon of vanilla extract
  • 1 egg white

For Brushing:

  • 1 egg yolk

Cooking Instructions:

  1. Finely chop the margarine. Mix the flour with baking powder and add it to the margarine, then mix well.
  2. Add kefir to the crumbly mixture. Gently gather the dough, being careful not to over-knead it.
  3. Divide the ready dough into 3 balls and leave them in the refrigerator for 1 hour.
  4. Mash the cottage cheese with sugar and vanilla extract. Beat the egg white until stiff peaks form, then gently fold it into the cottage cheese mixture.
  5. Roll out the dough into rectangles (thickness 3 mm), spread the cottage cheese mixture over the surface, roll it into a log, and cut it into diagonal pieces.
  6. Place the rolls on a baking sheet lined with parchment paper.
  7. Brush the rolls with egg yolk and bake for 30-35 minutes at 180°C (356°F).
