Ingredients:
- 350–400 g (2.3–2.7 cups) flour
- 250 ml (1 cup) milk
- 100 g (1/2 cup) water
- 2 tbsp sugar
- 10 g (1 tbsp) dry yeast
- 125 g (1/2 cup) melted butter
- 1/2 tsp salt
- 1 tbsp semolina
- 250 g (1 cup) cottage cheese
- 100 g (1 cup) greens (green onions, dill)
- 100 g (1 cup) hard cheese
- 250 g (1 cup) boiled chicken fillet
- 1/4 tsp ground pepper
Instructions:
- Prepare the dough: In a small bowl, mix half a cup of warm water, 1 tbsp flour, 1 tbsp sugar, and yeast. Let the mixture sit for 5–10 minutes to allow the yeast to activate.
- In a deep bowl, sift flour, then add warm milk, melted butter, yeast mixture, sugar, and salt.
- Place the dough in a warm place for 1–1.5 hours until it doubles in volume.
- Punch down the dough and let it rise for an additional 30–40 minutes.
- Divide the dough into 2 parts and roll each into a 1 cm thick circle. Place them on a baking sheet.
- For the filling, mix finely chopped greens with cottage cheese, add salt and pepper to taste.
- Grate the cheese and finely chop the chicken fillet.
- Sprinkle semolina over the dough circles to prevent them from getting soggy.
- Spread the cottage cheese mixture over the dough, followed by the chicken fillet and grated hard cheese.
- Bake the pizza for 20–25 minutes at a temperature of 200°C (392°F) until it has a golden crust.
