Berry Mascarpone Cream Cake


  • 3 chicken eggs (180 grams / about 6.3 ounces)
  • 150 grams (about 5.3 ounces) sugar
  • 150 grams (about 5.3 ounces) wheat flour

For the Cream:

  • 250 grams (about 8.8 ounces) heavy cream (33% fat)
  • 150 grams (about 5.3 ounces) sugar
  • 250 grams (about 8.8 ounces) mascarpone cheese

For the Filling:

  • 600 grams (about 21 ounces) frozen cherries (or other berries of your choice, such as blackcurrants)

For Decoration:

  • Chocolate


Prepare the Sponge Cake: Beat eggs with sugar until light and fluffy, then gently fold in the flour. Bake for 15-20 minutes at 180°C (350°F).

Cooling and Filling: Allow the sponge cake to cool, then spread the cherries on top.
