Potato, Meat, and Pickle Puff Pastry Boats

Ingredients:

  • Chicken egg: 1
  • Onion: 1 (200 grams / 7 ounces)
  • Potatoes: 1000 grams / 35 ounces
  • Pickled cucumbers: 120 grams / 4.2 ounces)
  • Cheese: 50 grams / 1.8 ounces)
  • Puff pastry: 500 grams (17.5 ounces)
  • Pork: 400 grams (14 ounces)

Instructions:

Boil the potatoes and mash them as you normally would for your family.

Cut the meat into chunks (I used pork shoulder, not lean). Slice the onion into half-rings and sauté everything as follows: cook the meat over high heat, stirring for 3 minutes, then add the onion, stir, reduce the heat, cover, and simmer for another 10 minutes. Afterward, remove the lid, increase the heat to medium, and cook for an additional 4 minutes until the juices evaporate. Turn off the heat.

Slice the pickles into half-rings or strips (if they are large). Use only salty or barrel pickled cucumbers (store-bought ones smell strongly of vinegar). If you have more pickles, feel free to add them; you won’t regret it!

Divide the thawed puff pastry into 4 parts (each sheet, I had 2 sheets, made 8 boats). Roll out each part into a rectangle, about 1/4 larger than the original. The edges of the rolled-out dough should be slightly thinner than the center.

In the center of each rectangle, place two or three heaping tablespoons of prepared mashed potatoes, followed by the cooked meat and sliced pickles. Make longitudinal cuts on both sides.

Now, fold each side alternately, ensuring that the cut is in the center.

Shape each pastry into a boat, pinching the edges.

Place them on a baking sheet; I had limited space on the tray, so I lined each boat with parchment paper. Brush the boats with beaten chicken egg; you can also pour a little inside, and lightly sprinkle the center with grated cheese.

Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit) and bake until golden brown. Since all the ingredients are already cooked, 25 minutes will be sufficient.
