Sweet Pickled Beets

Ingredients (Serves 10):

  • Cloves: 4 buds
  • Small beets: 1 kg (2.2 lbs)
  • Cinnamon stick: 1
  • Sugar: 250g (1 1/4 cups)
  • Salt: 1 tsp (5g)
  • Wine vinegar: 1 liter (4.2 cups)
  • Black peppercorns: 4


Prepare the Marinade:

In a large pot, combine the wine vinegar, salt, cinnamon stick, black peppercorns, cloves, and sugar.
Stirring occasionally, bring the mixture to a boil.

Cook the Beets:

Wash the beets thoroughly but do not peel them.

Place the beets in the boiling marinade and cook on low heat for 1 hour.

Remove from heat and let the beets cool in the marinade.

Prepare for Canning:

Once cooled, remove the beets from the marinade, peel them, and cut into cubes.

Pack the beet cubes into sterilized jars, leaving 2.5 cm (1 inch) of headspace.

Finish the Marinade:

Bring the marinade back to a boil and pour it over the beets in the jars, covering them completely.
Seal the jars tightly.

Store the jars in a dark, cool place. The pickled beets will be ready to eat in 3 weeks.
