The fritters left an indelible impression, and now, I find myself making them this way every time! Interestingly, they seem to grow on you even more after sitting for a while – at room temperature or even cold the next day. I highly recommend savoring them with a side of yogurt and garlic. Prepare to be transported to a world of flavors!

Turkish Zucchini Fritters: A Flavorful Twist You Must Try!

Ingredients:

  • 800g (1.76 pounds) young green zucchinis (approximately three medium-sized)
  • Small bunch of parsley
  • Small bunch of dill
  • 2 green onions (or a small bunch of chives, as a substitute)
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 cup flour
  • 200g (7 ounces) feta, or a similar fresh cheese (I used Adygei cheese)
  • Salt and ground pepper to taste
  • Sunflower or olive oil for frying

For serving:

  • 1 cup thick Greek yogurt
  • 2 garlic cloves
  • Salt to taste

Instructions:

  1. Grate zucchinis coarsely and place them in a bowl. Sprinkle with a little salt and let them sit for 20 minutes. Afterward, squeeze out the excess water from the zucchinis using your hands or paper towels.
  2. Finely chop parsley, dill, and green onions.
  3. Add the chopped herbs, eggs, salt, and pepper to the grated zucchinis. (Be cautious with the salt, as the fresh cheese is also salty.) Mix well.
  4. Add flour and baking powder, mix again. Then add crumbled cheese and mix thoroughly.
  5. Heat vegetable oil in a skillet. Using a tablespoon, place small portions of the zucchini mixture onto the skillet and flatten them.
  6. Cook on medium heat until golden brown, approximately 3 minutes on each side. Place them on paper towels and let them cool slightly.
  7. For serving, mix yogurt with crushed garlic and add salt to taste.
  8. Serve the fritters as an appetizer or a light main dish, accompanied by the yogurt-garlic sauce. Enjoy them warm, at room temperature, or even cold.
