Sunflower Potato and Meat Patties

Ingredients for 4 Servings

  • Potatoes – 1 kg (2.2 lbs)
  • Thyme sprigs – 2
  • Egg yolks – 3
  • Dry white wine – 1 cup (240 ml)
  • Butter – 1 tbsp (15 g)
  • Onion – 1
  • Garlic – 2 cloves
  • Slices of white bread – 4
  • Parsley sprigs – 2
  • Salt – to taste
  • Olive oil
  • Milk – 500 ml (2 cups)
  • Beef fillet – 650 g (1.4 lbs)


Marinate the Beef:

Cut the beef into 4 pieces, season with salt and pepper. Place the beef in a bowl with the wine, half the minced garlic, and thyme. Cover and marinate for 4 hours, stirring occasionally.

Prepare the Potatoes:

Peel and slice the potatoes. Peel and slice the onion into half rings. In a pot, combine the milk with 700 ml (3 cups) of water, add the potatoes, onion, remaining garlic, and a pinch of salt. Bring to a boil and cook for 20 minutes. Drain the liquid from the pot.

Mash the potatoes into a smooth puree, then mix in the egg yolks.

Cook the Beef:

Heat butter in a skillet. Remove the beef from the marinade, pat dry, and sear for 2 minutes on each side.

Transfer the mashed potatoes to a piping bag.

Line a baking sheet with parchment paper. Cut circles from the bread slices, 2 cm (3/4 inch) larger than the beef pieces.
