Savory Meatballs with Rice in Gravy

Ingredients:

  • 500 grams (about 1.1 pounds) assorted minced meat
  • Bay leaf, to taste
  • 1 teaspoon (10 grams) tomato paste
  • 1 tablespoon (20 grams) all-purpose flour
  • 1 tablespoon (20 grams) sour cream (25% fat content)
  • A pinch of salt
  • 1 large egg, approximately 60 grams
  • 1 onion, about 150 grams
  • 100 grams (about 1/2 cup) boiled white rice
  • 300 grams (about 1 1/4 cups) water

Instructions:

Grind the minced meat and onion together, either using a meat grinder or finely chopping the onion. Add boiled rice, salt, and mix well. If desired, the onion can be sautéed until translucent before adding it to the mixture.

Thoroughly knead the meat mixture until well combined.

Shape the mixture into small meatballs and coat them lightly with flour.

Heat a skillet with vegetable oil over medium heat. Place the meatballs in the skillet, leaving some space between them to prevent overcrowding. Fry the meatballs on one side for 3–5 minutes without covering them with a lid, as they may lose their shape. Carefully flip the meatballs and fry for another 3–5 minutes until they develop a golden brown crust.

Pour boiling water (about 1 cup) into the skillet, filling it halfway up the meatballs. Add a pinch of salt, tomato paste (you can dilute it in the water), and bay leaf to the water.

Cover the skillet with a lid and simmer the meatballs in the gravy for 10–15 minutes over medium heat.
