Ingredients (Serves 8):
- Chives: 1 bunch
- Lemon juice: 1 tbsp (15ml)
- Nutmeg: a pinch
- Salt and white pepper: to taste
- Parsley: 1 large bunch
- Eggs: 3
- Ready-made puff pastry: 400g (14 oz)
- Low-fat cottage cheese: 600g (21 oz)
- Heavy cream (22% fat): 150ml (5 fl oz)
- Garlic: 2 cloves
Instructions:
Prepare the Filling: Finely chop the herbs and garlic. Press the cottage cheese through a sieve and mix with the herbs, garlic, and lemon juice. Season with salt and white pepper.
Roll Out the Dough: On a floured surface, roll out the puff pastry into a round sheet. Grease a springform pan with butter. Place the dough in the pan, pressing it to the edges and forming high sides. Poke the dough several times with a fork.
Assemble the Pie: Spread the cottage cheese mixture evenly over the dough. In a separate bowl, beat the eggs with the cream, and season with salt, pepper, and nutmeg. Pour the egg mixture over the cottage cheese.
Bake the Pie: Preheat the oven to 220°C (425°F). Bake the pie for 50 minutes until the top is golden brown.
Pro Tip:
You can substitute part of the cottage cheese with feta, crumbled bryndza, or ricotta for a different flavor. Adding grated hard cheese will give the pie a nice tang.
Note:
This pie can also be made with phyllo dough instead of puff pastry. Use several layers of phyllo, brushing each layer with melted butter.
Enjoy your Savory Cottage Cheese and Herb Pie as a delicious and nutritious option for any meal!
