Many people believe that zrazy is a traditional Belarusian dish, but that’s not entirely true. Zrazy have been cooked in Ukraine, Russia, Poland, and Lithuania for a long time. It’s hard to say exactly where they originated. They are made in the form of a potato cutlet with a filling inside. Thanks to this recipe, you can easily prepare the most delicious zrazy without much effort.
To prepare zrazy, gather the following ingredients:
For the base:
- 12 medium-sized potatoes
- 1 onion
- 2 chicken eggs
- 5 tablespoons of flour
- 1 bay leaf
- 1 teaspoon of salt
For the filling:
- 500 grams of any ground meat
- 1 onion
- Salt and black pepper to taste
How to make the most appetizing and tasty zrazy:
Peel, wash, and cut the potatoes as you would for mashed potatoes. Put them in a saucepan, add water, salt, and cook. Once the potatoes are ready, drain the water and mash them until smooth.
Finely chop the onion and fry it in oil. Add the fried onion to the ground meat and mix well. Season with salt and black pepper.
When the mashed potatoes have cooled down, add the eggs and flour to it. Mix thoroughly.
Now shape the potato dough into medium-sized balls and then flatten them to make a patty. Place one tablespoon of filling in the center of each patty.
Seal the edges of the patty and form a large cutlet.
Roll each zrazy in flour and fry them on a heated skillet with oil on both sides until they develop a beautiful golden crust.
