  • 200g all-purpose flour
  • 600g sour apples
  • 4 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 250ml milk
  • 2 eggs

  • ⅓ tsp vanilla extract
  • 100ml vegetable oil
  • zest and juice of 1 lemon

In a large bowl, mix together sifted flour, sugar, baking powder, salt, cinnamon, and vanilla extract.

Add 2 beaten eggs to the flour mixture and stir.

Core and peel the apples, then cut into small pieces.

Heat a frying pan with 3 tbsp of vegetable oil over medium heat and spoon the batter onto the pan, making round pancakes, leaving space between each.
