Instructions for Making Moroccan-Spiced Roasted Cauliflower
Preheat the Oven
Preheat your oven to 400°F (200°C).
Sauté Aromatics
In a heavy, oven-safe skillet (such as cast iron), heat the olive oil over medium heat. Add the minced garlic and sliced onion, and sauté for about 3 minutes, or until the mixture is fragrant and the onions start to soften.
Season the Cauliflower
Add the cauliflower florets to the skillet, stirring to coat them in the garlic and onion mixture. Then add the diced tomatoes, ground cumin, turmeric, salt, black pepper, and red pepper flakes. Mix until the cauliflower is well coated with spices and tomatoes.
Roast the Cauliflower
Transfer the skillet to the preheated oven. Roast the cauliflower for approximately 45 minutes, or until the florets are tender and start to turn a light golden brown at the edges.
Prepare Fresh Herbs
While the cauliflower is roasting, mix the chopped cilantro and mint leaves together in a small bowl. Set aside for garnishing.
Garnish and Serve
Remove the skillet from the oven and sprinkle the fresh cilantro and mint over the roasted cauliflower. Serve immediately for the best flavor and texture.
Bon appetite!
