For this recipe, be sure to use a durable, heavy-duty skillet that can go from stovetop to oven, such as a cast-iron pan.

Ingredients for Moroccan-Spiced Roasted Cauliflower

  • 1 Tbsp olive oil (15 ml)
  • 2 cloves garlic, minced
  • 1 medium onion, sliced
  • 1 large cauliflower head, cut into florets
  • 1 cup diced tomatoes (240 ml)
  • 1 tsp ground cumin (5 grams)
  • 1/2 tsp turmeric (2 grams)
  • 1/2 tsp salt (2 grams)
  • 1/2 tsp black pepper (2 grams)
  • 1 pinch red pepper flakes (to taste)
  • 2 Tbsp fresh cilantro leaves, chopped (8 grams)
  • 1 tsp fresh mint leaves, chopped (1 gram)

Instructions for Making Moroccan-Spiced Roasted Cauliflower

Preheat the Oven

Preheat your oven to 400°F (200°C).

Sauté Aromatics

In a heavy, oven-safe skillet (such as cast iron), heat the olive oil over medium heat. Add the minced garlic and sliced onion, and sauté for about 3 minutes, or until the mixture is fragrant and the onions start to soften.

Season the Cauliflower

Add the cauliflower florets to the skillet, stirring to coat them in the garlic and onion mixture. Then add the diced tomatoes, ground cumin, turmeric, salt, black pepper, and red pepper flakes. Mix until the cauliflower is well coated with spices and tomatoes.

Roast the Cauliflower

Transfer the skillet to the preheated oven. Roast the cauliflower for approximately 45 minutes, or until the florets are tender and start to turn a light golden brown at the edges.

Prepare Fresh Herbs
