No-Bake Refreshing Kiwi Cheesecake: A Delicate Delight with Minimal Effort!

Ingredients:

Base:

  • 200 g (about 7 ounces) of cookies
  • 100 g (7 tablespoons) of unsalted butter

White Cream Layer:

  • 400 g (1.76 cups) of cream cheese (or curd strained at least twice)
  • 350 ml (1.5 cups) of heavy cream (33% fat)
  • 150 g (1.2 cups) of powdered sugar
  • 1 large packet of vanilla sugar
  • Juice of 1 lemon
  • 10 g (1 tablespoon) of gelatin

Kiwi Layer:

  • 1 kg (about 4 cups) of kiwi
  • 200 g (1.6 cups) of powdered sugar
  • 20 g (2 tablespoons) of gelatin

No-Bake Refreshing Kiwi Cheesecake: A Delicate Delight with Minimal Effort!

Instructions:

Crush the cookies into fine crumbs, add melted butter, and mix well.

Prepare a round baking form with a diameter of 24 cm, lining the bottom with parchment paper.

Spread the cookie layer evenly on the bottom.

Whip the cream with vanilla and powdered sugar until it forms a creamy consistency.

Prepare the gelatin as directed on the package. Add lemon juice and the swollen gelatin to the cream cheese (or curd), and mix well.

Incorporate the whipped cream into the cream cheese mixture. Spread the mixture onto the cookie base, reserving a small amount for decoration.

Prepare a small bowl, wrap the bottom and sides with plastic wrap, and carefully insert it into the center of the cream cheese filling. This will create a “funnel” for the kiwi layer.

Place it in the refrigerator for 2 hours.

After 2 hours, remove the bowl and then gently remove the plastic wrap.

Peel and blend the kiwi into a puree using a blender. Add sugar and simmer on low heat.

Prepare the gelatin as directed on the package and add it to the kiwi mixture. Let it cool slightly, then carefully pour it over the white cream layer and level it.

(*I would recommend not cooking the kiwi mixture, as it may lose its color during cooking. Simply mix the kiwi pulp with sugar a few hours before cooking, and the sugar will slowly dissolve. Alternatively, follow the instructions and add a few drops of food coloring.)

Let the entire mixture cool slightly, then pour it carefully over the white cream layer and level it.

Chill the cheesecake in the refrigerator until it sets completely.

Once set, decorate with the reserved white cream and any additional toppings of your choice.
