Liver Pancakes

Ingredients (Serves 4):

  • Carrot: 1 medium
  • Onion: 1 medium
  • Egg: 1 large
  • Vegetable oil: 3 tbsp (45ml)
  • Salt: to taste
  • Flour: 3 tbsp (24g)
  • Beef liver: 400g (14 oz)
  • Minced garlic: 1 clove


Prepare the Vegetables: Peel the carrot, onion, and garlic. Finely chop the onion and garlic, and grate the carrot coarsely.

Sauté the Vegetables: Heat 1 tablespoon (15ml) of vegetable oil in a skillet over medium heat. Sauté the onion and garlic for about 5 minutes until softened.

Prepare the Liver: Rinse the beef liver under cold water, pat it dry, and remove any membranes and ducts. Cut it into large pieces.

Blend the Mixture: In a blender, combine the liver pieces and grated carrot. Blend until smooth. Transfer the mixture to a bowl and mix in the sautéed onions and garlic. Add the egg, flour, salt, and pepper, stirring until well combined.

Cook the Pancakes: Heat some oil in a skillet over medium heat. Using a spoon, drop portions of the liver mixture onto the skillet, forming small pancakes about 2–3 cm (1 inch) apart. Cook for 3–4 minutes on each side until golden brown. Continue with the remaining mixture, adding more oil as needed.
