Crunchy cornmeal cookies with nuts in a simple and original Italian recipe.
- 3 eggs
- 200 gr. sugar
- 1 pinch of salt
- 2 tsp. cinnamon
- 50 ml. brandy (or rum)
- 200 gr. walnuts (mix: walnuts, almonds, hazelnuts)
- 400 gr. flour
- 200 gr. corn flour
- 1 tsp. baking powder
- 250 gr. butter
In a bowl put 3 eggs, sugar, salt and 1 tsp. cinnamon and beat with a mixer until fluffy and smooth. Add the cognac and beat a little more. Set aside for the moment.
Chop the nuts.
In a separate bowl mix the flour, cornmeal, baking powder, 1 tsp. cinnamon and mix it all together gently
Mix nuts and flour mixture
Add the egg mixture to the nut and flour mixture, mix, add melted butter and knead into an elastic dough
Line a baking sheet with parchment and place the cookies in small portions. Bake at 180 degrees Celsius for 20 minutes.
