  • 6 liters of milk (homemade, farm-fresh, unpasteurized)
  • 1.5 lemons, juiced
  • 3 tsp salt

  • Dill greens
  • 30-50g walnuts

Today, we’ve got an amazing recipe with just three ingredients, and no fuss involved.

No need for any starter cultures or rennets.

It’s dense, delicious, and yields a fantastic amount!

We recommend using farm-fresh milk, which costs around 40 rubles per liter.

It’s perfect for homemade cheeses.

Heat the milk slowly on low heat until it reaches a boiling point, then pour in the lemon juice.

Stir constantly and wait for the milk to curdle, which takes about 5-7 minutes.

Transfer the curdled mass to a cheese mold lined with cheesecloth.

Sprinkle salt on top and place a light weight on it for 30 minutes.

After half an hour, flip the cheese, sprinkle salt on the other side, and leave it in the mold for another 30 minutes.

Cut the cheese in half and coat one half with a mixture of dill greens and walnuts.

It turns out beautifully and tastes delicious.

With 6 liters of milk, we get 870g of cheese, which is a great result!
