In a saucepan, whisk eggs and gradually add sugar until the mixture thickens. Add semolina, lemon zest, and vanilla sugar. Pour in milk, creating a custard that thickens over heat, stirring constantly for about 10 minutes. Remove from heat, add 3 tablespoons of unsalted butter, and mix thoroughly.
