Festive Chocolate Mint Cookies

Ingredients for Festive Chocolate Mint Cookies

  • 1 box chocolate cake mix (any brand, but fudge or dark chocolate works best)

  • 1/4 cup (60 ml) water

  • 1/4 cup (60 ml) vegetable oil

  • 1 large egg

  • 1 cup (180 g) Andes brand chocolate mint baking morsels

How to Make Festive Chocolate Mint Cookies

  1. Preheat oven to 375°F (190°C). In a large mixing bowl, empty the chocolate cake mix and add water, vegetable oil, and egg. Stir until the batter is fully combined. Fold in the chocolate mint morsels until evenly distributed.

  2. Lightly spray baking sheets with nonstick cooking spray.

  3. Drop spoonfuls of dough onto the prepared baking sheets, spacing each about 2 inches (5 centimeters) apart. (Tip: You can skip the spray by lining the pans with parchment paper—this prevents sticking, makes cleanup easier, and helps the cookies bake more evenly.)

  4. Bake at 375°F (190°C) for 12–15 minutes, checking at the 12-minute mark to avoid overbaking.

  5. If Andes mint morsels aren’t available, substitute with crushed peppermint candies for a festive twist. This base recipe is also great for experimenting—swap in your favorite cake mix flavor and add-ins like chocolate chips, butterscotch chips, nuts, or dried fruit for endless variations.
