Chinese Honey Pork

Ingredients (Serves 4):

  • Pork neck: 600g (1.3 lbs)
  • Fresh ginger root: 3 cm (1.2 inches), 35-40g (1.2-1.4 oz)
  • Garlic cloves: 4 (20g or 0.7 oz)
  • Soy sauce: 6 tbsp (90ml), divided
  • Oyster sauce: 2 tbsp (30g)
  • Chinese cooking wine or white wine: 1 tbsp (15ml)
  • Cornstarch: 4 tbsp (32g)
  • Honey: 2 tbsp (35g)
  • Baking powder: 0.5 tsp (2.5g)
  • Freshly ground white pepper: 0.3 tsp (1.5g)
  • Salt: 1 tsp (5g)
  • Oil for deep frying
  • Green onions for garnish
  • Cooked rice for serving

Instructions:

Marinate the Pork:

Cut the pork into large pieces, about 10 cm (4 inches). Season with salt, white pepper, and baking powder. Add the wine, 3 tbsp (45ml) of soy sauce, and oyster sauce. Mix thoroughly by hand. Sprinkle with cornstarch and mix again. Cover and marinate in the refrigerator for 2 to 24 hours.

Prepare the Aromatics:

Peel the garlic and ginger. Finely chop the garlic and slice the ginger into matchstick-sized pieces.

First Frying:

Heat the oil in a wok over medium heat. Fry the pork in batches until lightly browned on all sides and about 80% cooked. Remove the pieces to a plate.

Second Frying:

Strain the oil and reheat it over high heat. Fry the pork again until dark golden brown. Transfer to paper towels to drain excess oil.

Make the Sauce:

Leave about 1.5 tbsp (22ml) of oil in the wok. Add the ginger and stir-fry over medium-high heat for 20 seconds. Add the garlic and stir-fry for another 20 seconds. Pour in 200ml (3/4 cup) of water and bring to a boil. Add the remaining 3 tbsp (45ml) of soy sauce and honey. Reduce the mixture by half.

Combine Pork and Sauce:

Add the fried pork to the sauce. Cook over high heat, turning the pieces continuously until the sauce has almost completely evaporated, coating the pork.

Serve the pork hot, garnished with green onions, alongside steamed rice.
