Ingredients:

  • 150 g (2/3 cup) unsalted butter
  • 150 g (1 1/4 cups) all-purpose flour
  • 150 g (2/3 cup) cottage cheese
  • 180 g (1 cup) sugar
  • 500 g (3 1/2 cups) frozen cherries
  • 50 ml (3.4 tbsp) water
  • 15 g (1 tbsp) gelatin

Instructions:

  1. Cut the butter into cubes and combine with flour. Use a knife to crumble them into fine crumbs.
  2. Add cottage cheese and 80 g of sugar to the mixture. Quickly knead the dough, shape it into a ball, wrap it in plastic wrap, and refrigerate for half an hour.
  3. Place the frozen cherries in a saucepan and sprinkle the remaining sugar over them. If the berries are very sour, you can add more than 100 g of sugar.
  4. Put the cherries on low heat. Do not add water; the berries will release the necessary amount of liquid on their own.
  5. Dissolve gelatin in cold water and let it sit for 20 minutes. When the cherry mixture is boiling, pour in the gelatin, stir, then remove the filling from the heat and let it cool.
  6. Roll out the dough thinly (about 0.5–1 cm thick), place it in a baking dish, form the edges, and make several punctures with a fork. Bake the pie crust in a preheated oven at 180°C (350°F) for 15 minutes.
  7. Spread the berries on the curd base and refrigerate the pie for about 15 minutes.
  8. Pour the remaining juice over the berries and place the pie in the refrigerator until completely set. Done!
