Beef and Potato Hashlama: A Hearty Armenian Dish

Ingredients:

  • Beef, 1 kg (brisket)
  • Potatoes, 600-900 g (1.3-2 lbs)
  • Tomatoes, 5 pieces
  • Bell peppers, 2 pieces
  • Onions, 2 pieces
  • Garlic
  • Greens
  • Black pepper
  • Salt

Instructions:

  1. Chop the beef into pieces and rinse it.
  2. Peel the onions and slice them into large rings.
  3. Peel the potatoes and cut them into large wedges.
  4. In a large pot or a thick-bottomed pan, layer the beef and then the onions.
  5. Cut the tomatoes into large wedges, not too small. Remove the seeds from the bell peppers and cut them into squares or large strips.
  6. Layer the tomatoes on top of the beef and onions, followed by the bell peppers. After that, add the potatoes. You can repeat these layers if needed.
  7. Pour enough room temperature water into the pot to barely cover the ingredients. Season with black pepper and salt. Cover with a lid, set the heat to low, and simmer the dish for 2.5-3 hours or until it’s ready.
  8. When serving, garnish the hashlama in individual plates with crushed garlic and chopped greens.
