Baked Eggplant with Cheese

Ingredients:

  • 1 eggplant (300 grams / about 10 ounces)
  • 2 tomatoes (200 grams / about 7 ounces)
  • 70 grams (about 2.5 ounces) cheese
  • 2 cloves of garlic (10 grams)
  • Salt to taste
  • Fresh herbs for garnish

Instructions:

Prepare all the necessary ingredients.

Peel the garlic cloves, rinse the eggplant and tomatoes.

Slice the eggplant into 8-10 mm thick rounds. Sprinkle the eggplant slices with salt, place them in a bowl, and let them sit for 30 minutes. Then rinse the eggplant slices and pat them dry. This step prevents bitterness in the final dish.

Arrange the eggplant slices on a parchment-lined baking sheet. Place a few small pieces of garlic on top of each eggplant slice.
