Apple Cake with a Hint of Brandy

Ingredients:

  • Brandy (Cognac): 1 tablespoon (17 grams)
  • Butter: 2 tablespoons (35 grams)
  • Sunflower oil: 2 tablespoons (35 grams)
  • Chicken eggs: 3 pieces
  • Apples: 4 pieces (600 grams / 21.2 ounces)
  • Wheat flour: 60 grams (2.1 ounces)
  • Sugar: 160 grams (5.6 ounces)
  • Baking powder: 10 grams (1 tablespoon)
  • Milk: 90 grams (3.2 ounces)
  • Walnuts: 3 tablespoons (60 grams / 2.1 ounces)

Instructions:

Beat 2 eggs with sugar (80 grams / 2.8 ounces) until light and frothy. Add sifted flour with baking powder. Stir in sunflower oil, milk, and brandy.

Peel and thinly slice the apples using a special grater. Mix the apples into the batter.

Transfer the batter into a baking tin with a diameter of 18 cm and bake for 30 minutes at 200°C (390°F).

For the topping, combine 1 egg, 2 tablespoons of melted butter, and 80 grams of sugar. Whisk well. Remove the hot cake from the oven and pour the topping over it. Sprinkle walnuts on top of the topping. Continue baking the cake for an additional 10-15 minutes. Once baked, allow the cake to cool completely. For best results, refrigerate overnight.
