When you want to eat something very tasty and healthy without meat, the Zucchini Frittata is the perfect option that will please your taste buds and will not take much time to prepare!
INGREDIENTS
- 800 grams of zucchini
- 4 medium eggs
- 50 ml. milk or cream
- 1 onion (100-120 g)
- 1 carrot
- 3 to 4 garlic cloves
- 100 gr grated cheese (hard, semi-hard – your choice)
- Greens (basil, parsley, dill – whatever you like)
- 1 tsp. ground breadcrumbs
- 3 tbsp vegetable oil
- salt
- pepper
INSTRUCTIONS
Peel the zucchinis from their skins.
Onion and garlic cut into small cubes and fry together in vegetable oil until the onion is soft and transparent, about three minutes.
Then add carrots grated on a medium grater.
Cook over medium heat for 2-3 minutes.
Add zucchini, stir and continue cooking until zucchini are soft, about 7-10 minutes.
Zucchini slices should become translucent. It is not necessary to salt yet.
Done zucchini put aside, let cool a little.
Turn on the oven, so that it heats to a temperature of 180 degrees.
Eggs lightly beat with salt with a fork or whisk. Add milk or cream and whisk again.
Since the zucchini we have not salted, the egg mixture should taste a little too salty, and then the finished frittata with zucchini will be moderately salty.
In the egg mixture, add cheese grated on a fine grater, chopped herbs and freshly ground black pepper. You can add Italian herbs if desired.
