Ingredients for 10 Servings:

For the crust:

  • 7 tablespoons cold butter (100g) + 0.5 tbsp for greasing the pan
  • 1 1/2 cups sifted flour (175g)
  • 2 tablespoons sugar
  • 1 egg yolk
  • A pinch of salt

For the filling:

  • 6 eggs
  • 1 1/4 cups sugar (250g)
  • 5 lemons
  • 2/3 cup heavy cream (35% fat) (150ml)
  • Powdered sugar for dusting


Prepare the Dough:

Cut the cold butter into cubes and mix with the flour, sugar, and salt until the mixture resembles coarse crumbs. Add the egg yolk and 1 tablespoon of cold water, and knead into a dough.

Form the dough into a ball, wrap in plastic wrap, and refrigerate for 20 minutes.

Wash the lemons thoroughly. Grate the zest from three lemons and chop finely. Juice all five lemons.

Preheat your oven to 375°F (190°C).

Grease a 9.5-inch (24cm) pie pan with butter. Roll out the dough into a large circle and line the pan, making sure the edges overhang. Prick the dough with a fork and refrigerate for 10 minutes.

Line the dough with parchment paper and fill with dried beans. Bake for 12-15 minutes, then remove the beans and parchment paper and bake for another 10-12 minutes.
