Simple, quick, and delicious flatbreads with a filling of potatoes and onions will exceed all your expectations.
Soft and tender yeast dough made with kefir and a generous amount of filling—what could be more delicious than homemade flatbreads prepared with your own hands! Here’s the recipe.
Ingredients:
- 1 ¾ cups kefir (or buttermilk)
- 4 ½ cups all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- 2 cups boiled potatoes
- 3 tbsp milk
- 1 large onion
- 2 tbsp vegetable oil
- Butter (for brushing the hot flatbreads)
Instructions:
Mix the flour with salt and baking soda, and combine this mixture with warm kefir (or buttermilk).
Knead a soft and elastic dough, cover it with a towel, and let it rest for about 20-30 minutes.
Finely chop the onion and sauté it until golden brown. Turn the hot boiled potatoes into mashed potatoes.
Add hot milk and the sautéed finely chopped onion to the mashed potatoes, and mix everything together.
Divide the dough into equal-sized balls and roll each ball into a small flatbread, about 8-10 mm thick…
… place the filling in the center, fold the dough over the filling…
… seal it at the top, place the seam side down, and roll out the flatbread. It’s okay if the flatbreads have some small tears.
Fry the flatbreads on a hot dry skillet over medium heat for about 2-3 minutes on each side—cover one side with a lid and fry the other side without a lid.
Brush the hot flatbreads with butter.
