Many are familiar with the dish known as “royal pie” or “royal curd pie.” Typically, it features a simple cottage cheese filling sandwiched between layers of grated shortcrust pastry. Today, I present to you an enhanced version of this cottage cheese delight – the Royal Cottage Cheese Pie. The result is an incredibly delicious pie, more than just any ordinary curd pie – this is truly a royal treat. I am immensely satisfied with the outcome!
Ingredients for Royal Cottage Cheese Pie:
For the Dough:
- 250 grams (about 2 cups) flour
- 120 grams (about 1/2 cup) butter
- 100 grams (about 1 cup) powdered sugar
- 1 egg yolk
- 2 tablespoons sour cream
- 2 tablespoons cocoa
- 1/2 teaspoon baking powder
For the Filling:
- 1 kilogram (about 2.2 pounds) cottage cheese
- 400 grams (about 1.7 cups) heavy cream
- 200 grams (about 1 cup) sugar
- 5 eggs
- 60 grams (about 1/2 cup) coconut flakes
- 30 grams (about 1/4 cup) starch
Royal Cottage Cheese Pie Preparation:
Prepare the Dough:
- Mix dry ingredients: flour, powdered sugar, cocoa, and baking powder. Transfer to a food processor and add slightly softened, cubed butter.
- Process into crumbs. If you don’t have a food processor, you can prepare it by hand, though it might be a bit more challenging.
- Add egg yolk, sour cream, and process again. Form the dough into a ball. Do not knead excessively.
- Divide it into 2 equal parts and refrigerate for an hour.
Prepare the Filling:
- In a bowl, combine cottage cheese, heavy cream, and sugar. Blend until smooth.
- Add eggs and starch. Blend with a blender until no lumps remain. Add coconut flakes and mix with a spoon.
Assemble the Pie:
- Grate one part of the dough using a coarse grater and spread it at the bottom of the baking dish, pressing it down slightly.
- Pour the filling over the dough. Grate the second part of the dough over the filling and level it.
- Bake the dessert for about an hour at 160 degrees Celsius (320 degrees Fahrenheit). The filling should have a slight jiggle, similar to baking a cheesecake.
