Quick side dish of baked potatoes with marinated tomatoes

Ingredients:

  • 1 kg potatoes (firm varieties work better than starchy ones)
  • 200 g tomatoes
  • 1 tablespoon capers in brine
  • 1 large garlic clove
  • 3 tablespoons balsamic vinegar
  • A small bunch of basil
  • Olive oil
  • Salt
  • Freshly ground black pepper

Directions:

Cut a cross on the tomatoes and pour boiling water over them for 30-40 seconds.

Rinse with cold water and remove the skin.

Finely chop the tomatoes together with the capers (previously rinsed with water and squeezed), basil leaves, and garlic.

Mix with 2 tablespoons of olive oil and let it marinate while preparing the potatoes.

Peel and cut the potatoes into large cubes.

Bring water to a boil in a pot and add 3 tablespoons of vinegar.

 

Put the potato cubes in the boiling water and let it cook for 2 minutes.

Drain the water and transfer the potatoes to a baking dish. Season with salt, pepper, and olive oil.

Bake in a preheated oven at 180°C for 30 minutes, stirring and flipping periodically.

Once the potatoes are cooked, let them cool to room temperature.

Place the marinated tomato sauce on individual plates.

Add the cooled potato cubes on top of the sauce and garnish with basil leaves if desired.
