Quick Pickled Eggplants: An Amazingly Spicy Appetizer!

Ingredients:

For the Quick Pickled Eggplants:

  • Eggplants – 1.5 kg (3.3 lbs)
  • Bell peppers – 3 pieces
  • Hot chili pepper – 1 piece
  • Onions – 2 pieces
  • Garlic – 1 head
  • Bunch of greens

For the Marinade:

  • Water – 750 ml (3.17 cups)
  • 9% Vinegar – 5 tbsp
  • Salt – 1.5 tbsp
  • Sunflower oil – 4-5 tbsp
  • Bay leaves – 2 pieces
  • Ground coriander – 0.5 tsp
  • Black peppercorns – 8-10 pieces

Quick Pickled Eggplants: An Amazingly Spicy Appetizer!

Instructions:

  1. Start by preparing the marinade. In a pot, combine water, salt, coriander, peppercorns, and bay leaves. Bring the mixture to a boil and simmer for 2-3 minutes after boiling. Turn off the heat and add vinegar.
  2. While the marinade is cooking, place the whole eggplants into another pot. Boil them for exactly 5 minutes, then drain and let them cool.
  3. Cut sweet peppers into strips, and onions into half-rings. Finely chop the hot chili pepper, and either mince the garlic or use a garlic press.
  4. Mix all the vegetables together.
  5. Slice the slightly cooled, boiled eggplants into rounds.
  6. Take a suitable container for pickling and layer the vegetables and eggplant slices. Start with the vegetable mix at the bottom, then add eggplants, alternating layers.
  7. Pour sunflower oil on top, compact the layers, and then pour the prepared marinade over them.
  8. Place the pickled eggplants in the refrigerator for 4-5 hours. The longer they marinate, the more flavorful they become. After 24 hours, these pickled eggplants will be an absolute bomb of taste!
