Ingredients:
- 350 grams (12.3 oz) Red Cabbage
- 1 tbsp (25 grams) Dijon Mustard
- 3 grams Salt
- 30 grams Sugar
- 1 tbsp (17 grams) Apple Cider Vinegar (3%)
- 100 grams (3.5 oz) Plain Yogurt (3.2%)
- 30 grams (1 oz) Parsley
- 250 grams (8.8 oz) Canned Sweet Corn
- 2 Carrots, 250 grams (8.8 oz)
- 350 grams (12.3 oz) White Cabbage
- Spices to taste
Instructions:
Finely shred the white cabbage. Crush it with your hands. Peel and grate the carrots using a coarse grater.
Finely shred the red cabbage, removing the tough parts (veins). Crush it well with your hands to soften it and release its juices. Chop the parsley.
Drain the liquid from the canned corn.
For the salad dressing: mix yogurt, salt, sugar, mustard, vinegar, and pepper. Stir well with a spoon until combined. Lightly whisk.
Combine all ingredients in a bowl. Pour the dressing over and gently mix again.
Allow the salad to marinate in the refrigerator for 2-3 hours before serving.
