Ingredients for 4 servings:
- 2 tomatoes
- 2 eggs
- 50 g (1.76 oz) ham
- 4 sprigs of dill or green onions
- Salt and pepper to taste
- Butter or vegetable oil
Wash and dry the tomatoes. Cut off the stem end of each tomato and carefully scoop out the pulp with a spoon. Lightly salt the inside of the tomatoes and grease them with oil.
Grease a baking dish or skillet with butter and place the tomatoes in it. Finely chop the ham. Place a small amount of ham into each tomato and break an egg into each tomato, being careful not to break the yolk. Season with salt and pepper.
Preheat the oven to 180°C (356°F) and bake the eggs in the tomatoes for 20 minutes. Sprinkle with chopped herbs before serving.
