Ingredients:
- Cottage cheese – 400g (about 2 cups)
- Butter – 50g (3.5 tablespoons)
- Egg – 1
- Baking soda – 1 teaspoon
- Salt – to taste
- Spices and herbs – to taste
Instructions:
Cottage cheese, preferably homemade, is pressed through a sieve with a spoon. Although using a meat grinder is an option, sieving tends to result in a smoother texture, enhancing the overall delicacy.
Add an egg, butter, baking soda, and salt to the cottage cheese.
Place a pot with this mixture over low heat and begin stirring with a spoon until it forms a uniform mass. Along the way, add spices – for instance, sprinkle dried basil. If you wish to give the melted cheese a yellowish hue, add turmeric.
Stir continuously until the mixture completely melts, and the first bubbles appear. Be cautious not to overheat, as excess time on the heat may cause water to separate, resulting in a melted cheese with a consistency similar to feta.
Pour the mixture into a bowl and let it cool. The melted cheese is ready. Note that the quality of the cottage cheese is crucial. If the melted cheese turns out too liquid, try adding cream next time.
Add some herbs, and enjoy your wholesome and delectable melted cheese on sandwiches!
Bon appétit!
