Enjoy delicious and natural cottage cheese made right at home – it’s easier than spending time searching for the right quality product in the store. All you need is regular milk and yogurt, and you can adjust the consistency of the cottage cheese to your liking. The process of shaping the cottage cheese will take about 10 minutes, but additional time is needed for cooling.
Ingredients:
- Milk – 2 liters (8.5 cups)
- Yogurt (natural without fillers) – 300 ml (1.25 cups)
Instructions:
In a saucepan, mix the milk with yogurt – it can be either liquid or thicker, kefir will also work. Place the saucepan over medium heat and warm the mixture to 40 degrees Celsius (104 degrees Fahrenheit). Remove the saucepan from the heat and let it cool to room temperature to allow the milk to sour. Then return the saucepan to the heat.
If you want the cottage cheese to be dry, heat it to 60 degrees Celsius (140 degrees Fahrenheit), and for a creamier texture, heat it to 40 degrees Celsius (104 degrees Fahrenheit). You can gently stir the mixture with a spoon to ensure even heating. Take a bowl, place a colander on it, and cover it with linen or cotton cloth. Pour the mixture from the saucepan into the colander. The whey will drain to the bottom, leaving the cottage cheese in the cloth.
Squeeze out the excess whey, tie the cloth with a rubber band, and hang it from the faucet over the sink for two hours to allow the remaining whey to drain.
The drier cottage cheese is perfect for making pancakes, while the softer one can be served immediately with fruit or jam.
