Ingredients for Curd Rolls:
- Flour – 100 g (about 3/4 cup)
- Full-fat, non-moist curd – 100 g (1/2 cup)
- Butter – 100 g (7 tablespoons)
- A pinch of salt
- 1 egg yolk
- Sugar and cinnamon (or vanilla) for filling
How to Prepare Curd Rolls:
- In sifted flour, add cubed cold butter and curd. Quickly chop with a knife until you get a moderately coarse crumb texture.
- Add the egg yolk and quickly knead the dough. The resulting dough should be heterogeneous, with a coarse-grained structure – this will provide excellent flakiness during baking.
- Roll the dough into a ball and, wrapped in plastic wrap, let it rest in the refrigerator for at least an hour, preferably 7-8 hours.
- Roll out the dough on a floured surface into a rectangle and cut it into triangles.
- Sprinkle the triangles with sugar and cinnamon or vanilla. Roll the triangles, giving them a crescent shape.
- Place the rolls on a buttered baking sheet and put them in an oven preheated to 200 degrees Celsius (392 degrees Fahrenheit).
- Bake for 25-30 minutes or until golden brown.
