Heavenly Tender Curd Rolls

Ingredients for Curd Rolls:

  • Flour – 100 g (about 3/4 cup)
  • Full-fat, non-moist curd – 100 g (1/2 cup)
  • Butter – 100 g (7 tablespoons)
  • A pinch of salt
  • 1 egg yolk
  • Sugar and cinnamon (or vanilla) for filling

How to Prepare Curd Rolls:

  1. In sifted flour, add cubed cold butter and curd. Quickly chop with a knife until you get a moderately coarse crumb texture.
  2. Add the egg yolk and quickly knead the dough. The resulting dough should be heterogeneous, with a coarse-grained structure – this will provide excellent flakiness during baking.
  3. Roll the dough into a ball and, wrapped in plastic wrap, let it rest in the refrigerator for at least an hour, preferably 7-8 hours.
  4. Roll out the dough on a floured surface into a rectangle and cut it into triangles.
  5. Sprinkle the triangles with sugar and cinnamon or vanilla. Roll the triangles, giving them a crescent shape.
  6. Place the rolls on a buttered baking sheet and put them in an oven preheated to 200 degrees Celsius (392 degrees Fahrenheit).
  7. Bake for 25-30 minutes or until golden brown.
